The garden set the pace for the rest of our work here. The harvest from the garden is sold in the store or refined in our kitchen and bakery where it is turned to excellent meals, bread or pastry. The leftovers from our guests are composted in our big composter (actually the biggest one in the country) where it, like alchemy, is transformed to nutritious compost which we can use in our garden and on our farm land.’

Säsongen i trädgården sätter taktpinnen för resten av verksamheten. Trädgårdens skörd säljs i butiken eller förädlas i kök och bageri till härliga rätter, bröd, bakverk. Gästernas matrester tas till vara i den stora kompostmaskinen (som faktiskt är landets största!) där det likt alkemi förvandlas till näringsrik kompost att gödsla med i trädgård och grönsaksodlingar.”
